After hanging for a while at Four Letter Word, I made my way over to Milli by Metric. The Logan Square neighborhood is beautiful and the brisk weather made for a very pleasant afternoon walk to the next (very new) café.

Milli by Metric

Metric really outdid themselves with the Milli buildout. The striking, open bar area greets patrons first. The red art deco-style light fixture wrapping around the bar is captivating. Above the bar, there’s a vaulted ceiling with exposed beams and an abstract mural. Plenty of windows allow for natural light to highlight the café’s materials.

The menu has something for every avid coffee or tea drinker – there are well-stocked, freshly roasted beans from Metric available to purchase in the retail area. Friendly baristas are hustling behind the bar, while chatting with regulars. There’s a steady flow of traffic into the shop and this large space comfortably accommodates a crowd.

I got a pour over of the Colombia Nelson Chaves Natural, which had rich notes of strawberry jam and Syrah that lingered after every sip.

Milli feels like the next era of the American café: design and service get the same care as the coffee. It’s built for efficient service, exceptional drinks, and aesthetic pleasure. This shop is perfect for staying a while, or simply taking a beat to enjoy the moment.

I'd highly recommend dropping by Four Letter Word and Milli next time you’re in Chicago. The cafés in the Logan Square neighborhood are perfect for anyone looking for a memorable coffee experience.

After a quick trip to Chicago, I found myself with a few free hours before I had to catch my flight home. I’d never been to the Windy City, but found a variety of flourishing cafés that had me eager to explore.

Four Letter Word

On W Diversey Ave, Four Letter Word is a grungy, calming oasis. The shop has beautiful herringbone wood floors throughout, scuffed with character at the register from years of orders placed. The music is soulful, and a variety of eclectic artwork gives the space a vibrant texture. Unique publications and books for browsing are always within reach. This is a place for lingering.

I ordered my classic cappuccino – it was perfectly balanced and silky. Later, I got the ube latte which had earthy and nutty flavors. I posted up at the bar area with a large wooden slab mounted on a brick divider. Regular customers stopped to chat with the baristas while clusters of friends caught up with each other around me.

Four Letter Word was originally established on the coast of Istanbul and eventually made its way over to Chicago. This coffee project, and its sister café, is a product of passion for good coffee, design, and people.

Dear coffee lovers,

We got on a call with Ally Walsh and Casey Wojtalewicz, the partners behind Canyon Coffee, for a relaxed, inspiring chat. The dynamic between this industrious duo is strong, with each founder having a clear focus based on their expertise. With Ally’s creative vision, and Casey’s scrappy, community-first approach, the two have built a thoughtful coffee company in Los Angeles, California. We’re excited to share their story!

Jon: What did your morning look like today? Any rituals or routines?

Casey: I was on daddy duty this morning. I got our son up, made oatmeal, and got him out the door—but absolutely no morning starts without coffee. Our passion for coffee really took off when Ally and I discovered the pour-over ritual years ago. That said, we’re parents now, I’ve got a Moccamaster, we use the scale, we’re drinking our year-round Ethiopian every morning, same recipe: 38 grams, fill it up to the 6, medium coarse grind.

Then, after I dropped our son off at preschool, I met with Ally at our coffee shop. Tuesdays are our day to sync with the manager and go over everything. Exciting news, we just signed a new lease, we’re expanding to New York. You heard it here first.

Ally: I got to sleep in a bit. I wasn’t on mom duty today, which was nice. I had coffee in bed and did some emails before heading to the shop to meet Casey for our morning meeting.

Jon: When you think about the early days of Canyon Coffee, was there a moment in particular that made you feel like, “We’re really doing this”?

Casey: I always tell people about this one time early on, about a month in. We started a little different. We were able to roast in someone else’s roastery, so we were able to start with pretty much no money. We were a musician / model couple. We started out selling wholesale and direct-to-consumer. I remember getting the check for our first wholesale order, which was for 8 retail bags to a little boutique, and the check was for maybe like $108. That moment made me realize, like oh God, we either have to quit now, or sell so much coffee if we ever want to actually be able to pay to live in LA. Having started the business without an exit plan, that was the first time I started to develop the long-term vision, out of necessity.

Ally: For me, it was five years later when we signed a lease for a 12,000 square-foot factory downtown to roast our coffee and set up our office. That’s when I was like, wow, we are really committed to this. We’re going to have to roast a lot of coffee to pay this rent, and to hire people, and do all the things we’d been wanting to do for so long.

Huey: Have any skills or lessons from your early careers in modeling (Ally) and music (Casey) carried over into the coffee industry?

Casey: Yes. Actually, before music, I wound up in Los Angeles as a Community Organizer. I don’t have plans for this, but, if I ever were to write a book about business, it would probably have a title like, “Everything I Learned About Business, I Learned as a Musician and/or Community Organizer.”

Because with music, and with community organizing, there’s one asset in common you don’t have: money. If you have a goal, and you need people, you have to think outside the box. You have to view the potential in people and think about ‘what else do we have that’s not money?’ Someone has a car…or knows a lawyer…and then you piece it all together.

That can be really empowering, because you can’t really get anyone to join your team unless you can inspire them. You have to give them the why. “Start with why” is now common business adage, but that’s live or die if you’re an organizer, and I’d say the same for a musician. You’re united around creating something. So both of those former careers gave me scrappiness and thinking-outside-the-box-ness.

And then when Ally was modeling, I’d sometimes be lucky enough to tag along to the shoots with her. Speaking from my perspective, I’d say that her time in that industry had to be formative for developing her eye and her skill with imagery and aesthetic. She’s made the Canyon brand into what it is. You kind of can see our role delineation there with those two backgrounds. Me with shoestring scrappiness and her with the vision.

Ally: Yes. I was very much excited to not do modeling anymore and launch my own thing. Being on set, working with photographers, art directors, and creative directors, I was excited to be on the other side of things. I was constantly observing and learning. Ultimately I realized I wanted to create a brand, a product.

Jon: Favorite coffee shops you’ve visited together?

Casey: I think we have to shout out Tandem in Portland, Maine. Ally found it first—which was often how it worked for us. I’d be on tour she’d be traveling for work, we’d find great spots, and then eventually we’d visit them together. But Tandem was founded by two people, who were actually the initial baristas sent to New York by James Freeman to open Blue Bottle in New York.

They’ve got this epic gas station bakery. When I think of going there in the late fall, the windows are fogged up, they’re playing records, they’ve got amazing pastries, and at the time we visited, their mugs said ‘gluten and butter’. Being from LA, I just loved it. They’re great people.

They were also one of the first roasters to work with Swift Cup for instant coffee. We asked about it when we saw it on the shelves, and they connected us with Nate at Swift, which resulted in us in being one of the first ten roasters to work with them as well.

Ally: I still love The Mill in San Francisco so much. It’s one of my top spots. Then in Paris, Dreamin’ Man serves some of the best coffee I’ve ever had. I was just there a couple of months ago. We also love Acid in Berlin too.

• In Tokyo, Japan, BRUTUS launched the BRUTUS COFFEE KIOSK in partnership with Glitch Coffee at Ginza Sony Park, featuring Glitch Coffee, ignis, and Brewman as guest shops, with more to come.

• AppleTV shared the trailer for Pluribus from Vince Gilligan, creator of Breaking Bad, starring Rhea Seehorn from Better Call Saul. The new series will be available to stream on AppleTV starting November 7.

• In New York, Josh Safdie hosted an early screening of Marty Supreme starring Timothée Chalamet. The new A24 film releases on Christmas Day this year.

Currently helmed by father and son Ajoy and Pranoy Thipaiah, Kerehaklu (“the shelter by the lake”) has been in operation since 1953, and today is a sprawling 250 acres with far more than just coffee. Avocados, peppercorns, jackfruit, figs, ginger, and a myriad of other flora maintain a lush forest helping to moderate a climate that — when viewed on a map — would seem too low in elevation and too hot for coffee. All that plus an eco retreat, and you have a sophisticated, diversified business with coffee as just one of the critical elements.

Doctor Mierisch and his son, Erwin II, were driving home from the farm when they spotted a man selling fruit on the side of the road. They stopped for a quick purchase—and noticed the man had a bag labeled “Java.” Curious, they asked about it. The man claimed the bag held seeds of a rare coffee variety called Java. Erwin was skeptical, but the Doc felt for the man and decided to buy the seeds anyway. And just like that, Java found its way to Nicaragua.

Last week marked a really exciting milestone. My co-founder and I launched Fathom: the IBD wellness journal on iOS via TestFlight for early access. Fathom supports people with Crohn’s disease and ulcerative colitis through personalized lifestyle and wellness insights.

In just two and a half months we built something people can actually download and try, which still feels kind of surreal. If someone you know might find it helpful, they can join the waitlist here. I’d love to get it into the hands of more people who could benefit.

• Notes: Orange Cream, Clove, Graham Cracker

• Process: Culture-washed

Note from the roaster:

Kerehaklu Estate, located in Chikmagalur, India, is run by Ajoy and Pranoy Thipaiah, a father and son team.

Pranoy’s father, Ajoy, has encyclopedic knowledge when it comes to agronomy and agriculture - always looking to work in harmony with the local biodiversity. His 35 years of experience at Kerehaklu has helped to mold how they approach not just coffee but life in this quiet nook of India.

Dear coffee lovers,

Over the summer, I visited Asheville, North Carolina—a mountain town with a thriving café culture in the heart of the Blue Ridge. The city carries a creative, laid-back energy that naturally spills into its local businesses.

Two cafés in particular stood out: Rowan Coffee and Pollen. While distinct in style, both felt deeply connected to Asheville’s spirit. Beyond serving excellent coffee, they highlight how cafés can bridge culture and craft, creating spaces that bring the community together.

Rowan Coffee

Just outside downtown Asheville, Rowan Coffee has settled into a cozy new spot at 785 Haywood Rd. The interior hits a sweet spot between Scandinavian farmhouse and modern warehouse. Wooden pews and booths line the walls, white wood beams stretch across the exposed ceilings, and smooth concrete floors tie it all together.

Rowan roasts their own coffee but is also a multi-roaster shop, so their espresso and pour-over menu always has a wide variety of options. On top of that, they serve Scandinavian-inspired bites— like salmon dip, Danish pancakes, tinned mussels—and even have a full bar with natural wine.

The atmosphere at Rowan feels kind of dreamy—King Krule playing in the background, voices carrying through the big open space, and olive-green tiles wrapping around the bar that tie it all together. It’s one of those spots that just works, whether you’re an Asheville local or just visiting for the weekend.

Pollen

Now picture a vibrant New York City flower stand that also serves incredible coffee. This is Pollen. The space radiates life, with greenery spilling from every corner, displays of handcrafted ceramics, and locally made goods that add even more character.

Pollen is a multi-roaster café that brings in coffee from all over the world—whether you’re after a classic espresso drink, a pour-over, or just a solid drip, they’ve got you covered. They run a floral service out of the same space, offering fresh, seasonal arrangements that make any occasion feel special.

The café itself is filled with light thanks to floor-to-ceiling windows, and the space has this calm, inviting energy where both people and plants seem to thrive. Some folks pop in quickly for a to-go order, while others linger a little longer working, catching up with friends, or just soaking in the greenery.

Rowan Coffee: A Closer Look

Last week was a big one for F1 fans! The Cadillac Formula 1 Team finally announced their driver lineup for the 2026 season: Checo Pérez and Valtteri Bottas. Adding to the buzz, Racing Bulls rookie Isack Hadjar claimed his first F1 podium with a third-place finish at the Dutch Grand Prix in Zandvoort.

The September issue of GQ includes a must-read feature: Inside the Top Secret Virgil Abloh Archive, a deep dive into the late designer’s catalog of unreleased work. The archive reveals early plans for a “secret line” with Louis Vuitton, a prototype Prada Linea Rossa x Nike collaboration, and more. It’s a fascinating look at the many eras of Virgil’s career and his inspiring ideas for future projects.

Note from the roaster:

Ngunguru is part of the Tekangu Farmers Cooperative Society and located in Nyeri in central Kenya. Tekangu FCS includes the Ngunguru, Karagoto and Tegu factories. The Society’s name is a port-manteau of the original three factories: Te-ka-ngu. Tekangu is made up of smallholder farms, each with 100 trees. They organized in Cooperative Societies that act as an umbrella organizations for factories and wet mills.

Note from the roaster:

Rodrigo Sanchez is a fourth generation farmer overseeing multiple farms in Huila, Colombia, working to keep coffee growing traditions alive while innovating new processing methods. Aromas Del Sur is the company he built to encompass all of his farms and, in 2019, Rodrigo and his wife Claudia Samboni built the Aroma Del Sur Dry Mill with the aim to process coffee for clients focused on high quality specialty beans using top level processing and traceability, with zero defects.

As a designer, I love deep diving into intentional creative work. Lately, a few architectural finds have stood out to me: The PL Peace Tower (1970) by Tokuchika Miki, The Mitchell House (1959) by Calvin Straub, and a striking modern besso—a Japanese countryside retreat—by Rei Mitsui. Each offers its own unique sense of space and purpose.

I also discovered Bouquet, a brand brilliantly positioning itself as “syrups for grown-ups.” Their bold, flavor-driven infusions are free of artificial ingredients and specifically crafted for cafes and cocktails.

Note from the roaster:

Arnulfo Leguizamo, owner of Finca El Faldon, is a legend in a lot of ways: the 2011 First Prize Winner at the Cup of Excellence, community leader who supports fellow farmers to improve their coffee quality, and inspiration to others - including his son, Diego. Alongside his father, Diego has trained as a cupper and has started to manage the farm, with dreams of being in charge of their multigenerational coffee business in the future.

Hacienda La Esmeralda is a farm name that needs no introduction. Run by the Peterson family, it has a reputation for producing exceptional coffees and have won the Best of Panama numerous times - most recently taking 1st in all 3 categories: Geisha Natural, Geisha Washed and Varietals.
