Dear coffee lovers,

Big news for Toronto foodies! Over the weekend, musician Charlotte Day Wilson launched her restaurant venture, Tutto Panino, in Toronto. The shop is serving up Italian classics such as sandwiches, fresh cannolis, and tiramisu. But heads up: it’s all first come, first served—once it’s gone, it’s gone.

Today we’ll be exploring two unique Colombian roasts: A wash-processed, Bourbon Chiroso varietal from Apollon’s Gold in Tokyo, Japan, and a natural-processed, Caturrón varietal from Swerl Coffee Roasters in Falkenberg, Sweden. Let’s dive in! 👀

The daily sipper

For this week’s approachable pick, we’re featuring the Elkin Urrego from Apollon’s Gold. This lot is a particularly special Bourbon Chiroso varietal produced by Elkin Urrego in Urrao, Colombia.

With this classically washed roast, you can expect notes of bright grapefruit, juicy guava, and vivid osmanthus florals. For brewing, I’d suggest using a Hario V60, Kalita Wave, Hario Switch, or an April Brewer to emphasize clarity and aromatics.

The wild one

Swerl’s new Colombian Rio Bamisa Caturrón is our adventurous option this week. Produced by Rio Bamisa Communities in the Acevedo, Huila region, this naturally processed Caturrón varietal is unique:

Caturrón is a hybrid born of Híbrido de Timor and Bourbon or Caturra. Its tropical fruit-forward profile, shaped by the bean’s natural sugars, starts in the cherry and persists beautifully in the cup.

You’ll experience sweet, juicy notes of canned pineapple, ripe blackberries, and milk chocolate. I’d suggest brewing this coffee on a Hario V60 (also try it iced!), an Origami Dripper, Hario Switch, or an AeroPress (inverted method) to showcase its fruit-forward, candy-like, and even boozy characteristics.
