Weekly Roasts: Frukt and Mirra
A small, specialty roaster with a new cafe in Turku, Finland and a vibrant, Nordic-style roaster based in Kingston, New York, USA.
Dear coffee lovers,
This week’s selection is from two contemporary roasters: Frukt Coffee Roasters and Mirra Coffee. Both roasters have a similar vision for highlighting qualities in their coffees, such as sweetness, acidity, clarity, and complexity. Today, we’ll be focusing on a clean, sweet coffee produced in Honduras and a zingy, juicy coffee produced in Colombia.
The daily sipper
Nestled in the charming city of Turku, Finland, we find the roaster of our first featured coffee: Frukt Coffee Roasters. Founded by Samuli Pääkkönen, Frukt has been crafting exceptional specialty coffee ever since 2018. After honing his roasting skills at Turun Kahvipaahtimo and Copenhagen’s infamous Coffee Collective, Samuli returned home to establish Frukt, a roastery focused on sourcing fantastic beans and perfecting their roast profiles. This past year, Frukt opened their first cafe space in the Maalaistentalo building, designed by the renowned Finnish architect, Alvar Aalto. It’s a perfect pairing of exceptional coffee and iconic design.
Frukt’s Mario Moreno Natural is this week’s clean and balanced coffee selection. This coffee was produced by Mario Moreno in Santa Barbara, Honduras, whose coffees have been a cornerstone of Frukt's seasonal offerings. Mario’s dedication to quality shines through in every harvest, and this natural lot is no exception. Frukt has been proudly featuring Mario’s coffees since 2019, showcasing his ability to deliver standout flavors every year.
This natural-processed Bourbon variety offers delightful notes of stone fruit and milk chocolate with a velvety mouthfeel in the cup. The natural processing brings out this coffee’s fruit-forward characteristics while maintaining a clean, sweet profile. This Honduras coffee from Frukt is perfect for the coffee enjoyer seeking a balanced and approachable cup. This selection combines a delicate acidity with a chocolatey sweetness, making it a great choice for both pour overs and espresso.

The wild one
Today’s second featured coffee is brought to you by Mirra Coffee, who are dedicated to roasting coffees that are focused on purity and fidelity. Mirra was founded in December 2022 by Will Warren in upstate New York, who is deeply inspired by Scandinavian roasters such as Tim Wendelboe, Coffee Collective, La Cabra, and April Coffee Roasters. Warren goes into more detail on Mirra’s Nordic-style roasting philosophy:
It is also the style best suited to develop the level of sweetness, acidity, clarity, and complexity that we expect in world-class coffee. Because Nordic-style roasting is such a light, minimal style, all you’re tasting in the cup is the purest expression of the bean’s inherent flavor.
The north star for Mirra is to bring the beauty of Nordic-style coffees to the United States and deliver outstanding coffees to their customers.
This week’s selection from Mirra is a unique one with vibrant notes. The Colombia - Finca Inmaculada produced by Wilmer Gallardo Paz is a coffee that’s on the more wild end of the spectrum. This particular coffee from Huila, Colombia is a rare Striped Bourbon varietal, which is a unique mutation from the less common Pink Bourbon varietal. Wilmer Gallardo Paz’s dedication and attention to detail make this coffee a shining example of innovation in specialty coffee.
While the flavors of this Colombian coffee from Mirra are undeniably lively, there’s a sophistication that also makes it wild and yet refined. Expect a cup bursting with raspberry jam sweetness, floral notes that present as cotton candy, and a zesty kiwi acidity. This coffee’s juicy qualities makes it an unforgettable experience for coffee lovers who are looking for an exciting, fruit-forward cup. Mirra suggests drinking this coffee black to fully appreciate the delicate flavors and balance it has to offer.
