Dear coffee lovers,
Today I have two new coffees for you from HEX Coffee in Charlotte, North Carolina, USA and Every Coffee in Oakville, Ontario, Canada. These are two standout Colombian coffees. The first selection is elegantly fruity yet approachable; and the second is a vibrant, co-ferment with a compelling wine-like profile. These offerings showcase Colombia's diverse terroir and experimental processing innovations.
The daily sipper
Our clean and balanced coffee of the week is the Nayith Morales from HEX, who pride themselves in having “finely tuned” roasts (they really do though 👀). This particular Colombian coffee is from the San Augustín, Huila region and was produced by Doña Nayith and her husband. The HEX team notes that while the producers work with a modest farm and face logistical challenges, they delivered this fantastic lot.
This coffee’s fruit-forward notes will be on the lighter side due to its washed processing. In the cup, you can expect a beautifully bright combination of roasted strawberries, raspberry, and pineapple juice. While this coffee is more expressive, it’s also one that’s approachable for the average Joe. It makes for a great pour-over to enjoy on a sunny day (or on a gloomy day to remind you of a sunny day).

The wild one
Focused on conservation and building deep connections, Every is the Canadian roaster bringing us today’s bold and wild selection: The Santa Monica. This distinct coffee was introduced to the Every team by the Cofinet group which works directly with the Colombian producer of this lot, Jairo Arcila. The Every team excitedly highlights:
Out of all our coffees, this one is the wildest yet. If you’re ready for something truly unique and adventurous, this coffee is a must-try.
With its wine yeast and blackberry co-fermentation processing method, this Colombian coffee will absolutely take you on a journey of vibrant flavors. You can expect a boozy and rich blackberry wine flavor profile that is sure to leave a lasting impression. This coffee will be on the more experimental and funky side (think natural wine 🍷) compared to traditional processing methods. If you’re feeling bold, give it a try to see what the co-ferment hype is about.
