For today’s new roasts, we have a balanced Colombian coffee from Hydrangea Coffee Roasters in California, USA and a second Colombian coffee from Lima Coffee Roasters in Colorado, USA—but this one’s intensely juicy. Let’s dive in! 👀
The daily sipper
The Daiver Mallama Colombia from Hydrangea is our pick for this week’s clean and balanced coffee. The Hydrangea team mentions that Eyder Andrés Martínez—coffee processor, producer and exporter—assisted with processing this lot due to farmers in this region having limited infrastructure.
You can expect delicate flavor notes from this wash-processed roast such as lime, guava, and hojicha. Brewing with a Hario V60, Kalita Wave, or Cafec Flower Dripper would showcase bright acidity and tea-like qualities this coffee has to offer.

The wild one
Our expressive and experimental selection is the Luis Anibal Colombia microlot from Lima. Based in Acevedo, Huila, Colombia, Anibal is a second generation coffee producer and is the owner of Finca Villa Betulia.
Due to its unique double honey anaerobic processing, there will be wilder notes of white peach, strawberry, and cinnamon in this roast. I’d highly recommend trying it as espresso shots and/or a small milk-based drink. For filtered brewing, I’d suggest using an Origami Dripper, Kalita Wave, or AeroPress to capture its loud and aromatic profile.
