Dear coffee lovers,
Calling all Ari Aster fans (Midsommar, Hereditary)! If you haven’t yet, check out his recent Closet Picks segment with the Criterion Collection. Aster shares a selection of formative films that helped inspire his latest project, Eddington.
Also worth highlighting: Coffee Club’s latest interview with Matt Heltzel, founder of Moxie Coffee Co. It’s a thoughtful and inspiring conversation, as Matt reflects on his journey and his deep commitment to craft and excellence.
Next up—Weekly Roasts! Today we’re featuring two new Colombian coffees: an elegant, washed Pink Bourbon varietal from Koppi Roasters in Helsingborg, Sweden and a unique Java varietal with carbonic maceration + honey processing from Enjoy Coffee Roasters in Rhode Island, USA. Let’s dive in! 👀
The daily sipper
Colombia - Finca La Fuente
Roaster: Koppi Roasters
Origin: Tarqui, Huila, Colombia
Producer: Yobani Ramos & Yaved Guarnizo, La Fuente
Varietal: Pink Bourbon
Notes: Red Berries, Fruity, Elegant
Process: Washed
Note from the roaster:
Yobani and Yaved are growing their coffee according to organic and biodynamic practices, caring for the plants and wildlife on the farm. Yaved is interested in biodynamic studies and is making three different composts/compost teas as well as a couple of clever natural pesticides. Due to the high elevation, the cooler average temperature allows a slow ripening that builds up lots of sugars and complex flavors in the coffee cherries. The cherries are bursting with flavor of papaya, lychee and melon.
Recommended brewing methods:
Hario V60 · Origami Dripper · Orea V4 · Cafec Flower Dripper · AeroPress

Notes: Green Apple, Jasmine, Tropical, Pineapple, Electric
Process: Carbonic Maceration + Honey
Note from the roaster:
Back in 1995, the Bayter Family rolled up their sleeves and dove headfirst into the agricultural scene at El Vergel farm. Fast forward to 2016, and with a little guidance from coffee guru Miguel Jimenez, they planted specialty coffee varieties, setting the stage for some serious coffee greatness.
The Bayter brothers planted 9,200 trees of this rare variety in 2016. This microlot has been one of the most exotic of the estate developing totally unique cup profiles.
