Welcome back to Weekly Roasts! I hope you all had a relaxing and restful Thanksgiving holiday. Here’s a few interesting finds I came across last week:
Matter published an interesting piece on how people are moving away from traditional social platforms and toward niche, hobby-focused apps.
Wallpaper shared an exclusive first look at KURO’s new minimalist café inside Harvey Nichols in Knightsbridge.
And if you’re hunting for new music, Portal Records has an incredible selection of Japanese mellow and rare groove albums from the ’70s and ’80s.
As for this week’s roasts, we’re featuring two Colombian coffees: a balanced washed roast from Market Lane Coffee in Melbourne, Australia, and an experimental cultured embryonic nitro washed coffee from Hatch Coffee in Markham, Ontario. Let’s dive in! 👀

Notes: Dried Mango, Blackberry, Toffee Sweetness
Process: Washed
Note from the roaster:
William and Aminta are always looking to the future. In 2019, they told us that they had gifted each of their children, Mauricio and Geraldia, a plot of land. They hope that this will encourage them, and other young people in the region, to continue their legacy of producing exceptional coffee.

Roaster: Hatch Coffee

Notes: Melona, Honeydew Melon, Cantaloupe, Brown Sugar
Process: Cultured Embryonic Nitro Washed
Note from the roaster:
Andres Quinceno created a unique anaerobic processing method that utilizes “embryonic stress” to generate unique flavors. This involves subjecting ripe coffee cherries to a “nitro washed process,” where the temperature rises and falls by 12 degrees to optimize them for fermentation.
