Dear coffee lovers,

Last week, I took a trip down to Asheville, North Carolina to hang with some friends. The coffee there was pretty fantastic (more on that in our upcoming Cafe Trips). The food was great too. My buddy CJ suggested MOTHER bread + wine and Chai Pani—both spots were incredible and I’d highly recommend dropping in sometime.

For today’s new roasts, I tracked down a sweet, balanced Honduran coffee from Onibus Coffee in Tokyo, Japan and a bright, fruity Ethiopian coffee from Dak Coffee Roasters in Amsterdam, Netherlands. Let’s dive in! 👀

The daily sipper

The latest Honduras release from Onibus is our pick for an approachable roast. Heyvis, the oldest son of the Sagastume family, produced this lot and inherited the La Aguja Farm in Santa Barbara from his father, Pedro, in 2016.

With this washed processed roast, you’ll taste notes reminiscent of red apples, apricot, subtle cane sugar, and cocoa. This coffee’s crisp acidity and sweetness will shine when brewed with filter methods like the Hario V60, an AeroPress, Cafec Flower Dripper, or Hario Switch.

The wild one

Our vibrant, fruit-forward pick is the naturally processed Mango Tango from Dak. This exceptional crop, composed of a local Landrace varietal, was produced by the Danche Washing station group in Gebeb, Ethiopia.

You’ll notice tropical notes of mangos, grilled peaches, and vanilla while enjoying this coffee. To experience the full potential of this roast, I’d suggest brewing it on a Hario V60 (it would be a great iced pour-over!), an AeroPress (inverted method), Hario Switch, or as espresso shots.
