Dear coffee lovers,

Today we’re exploring an approachable Colombian roast from Onyx Coffee Lab headquartered in Rogers, Arkansas, USA and an experimental Ethiopian coffee from LiLo Coffee Roasters in Osaka, Japan. Let’s dive in! 👀

The daily sipper

Today’s balanced selection is the new Colombia Edward Sandoval Chiroso by Onyx, an iconic roaster based in the United States. This unique micro-lot was produced by Edward Sandoval on his three-hectare farm in Ibague, Tolima, Colombia. For the past three years, Sandoval has been dedicated to cultivating multiple varieties of high quality specialty coffees on his own.

This rare, wash-processed Chiroso varietal is making a splash in the specialty coffee industry. Expect delicate flavor notes of pear, melon, oolong tea, and raw sugar. Onyx highlights that they’ve been primarily enjoying this coffee using filtered brewing methods (try it on a V60, Chemex, or Kalita Wave).

The wild one

Our second selection is the anaerobic, naturally processed Ethiopia Yirgacheffe Aricha from Japanese roaster, LiLo. This coffee was produced in collaboration between Ashenafi Argaw and Dawit Dangiso in Aricha, Yirgacheffe, Ethiopia. LiLo notes that only perfectly ripe cherries were selected by Ashenafi and Dawit for this ambitious and experimental coffee project.

Due to its unique processing methods and region, this offering from LiLo will have some vibrant, complex characteristics. In this cup you’ll find rich, juicy flavors of strawberry and peach with hints of pink pepper. Brewing up this coffee on a pour-over method or as a Japanese iced pour-over would yield a delicious result.
