Discover Passenger's wet-processed field blend from Papua New Guinea, and an unusually funky El Salvadorian coffee from Hidden Coffee Roasters.

For today’s roasts, we’ll be exploring a smooth field blend from Papua New Guinea by Passenger based in Pennsylvania, USA, and a wild elixir originating from El Salvador by Hidden Coffee Roasters in Barcelona, Spain. Let’s dive in! 👀
The daily sipper
The selection for this week’s clean and balanced coffee is the Mong Shade-Dried roasted by Passenger. Being a field blend, various producers were responsible for growing and cultivating this lot in the Western Highlands region of Papua New Guinea.
After being processed at the Mong Washing Station, the coffee was shade-dried to increase its drying time, which is uncommon for coffee from Papua New Guinea. Savory and sweet notes of brown butter, clementine, and prunes will be prominent in this cup. For a brew with optimal clarity, I’d suggest using a Hario V60, Origami, or Chemex.

The wild one
The Coyote from Hidden’s “Competition Series” is today’s funky pick, which originates from El Salvador (yes, you read that correctly 👀). Hidden provides a closer look at the background of this unusual lot’s producer:
[Andrés Salaverria] is the fifth generation of this family dedicated to coffee growing. He has been working with coffee since 2011, always concerned with innovating and improving, as well as working on the social and ecological components surrounding coffee growing.
Having undergone more than 300 hours of anaerobic fermentation, this brew packs transcendent notes of cherry liqueur, dried papaya, and blood orange. The Hidden team recommends preparing this punchy omni-roast on a Hario V60, AeroPress, French press, Chemex, or as espresso.
