Weekly Roasts: Process and Color
Discover a clean Ethiopian coffee with a buttery mouthfeel from Process Coffee, and an impressionable Ecuadorian coffee with an extended fermentation process from Color Coffee.

Last week presented uncertainty for all specialty coffee business owners in the United States. With a new minimum 10% tariff on all imports, US-based roasters are ideating on the best path forward to keep their businesses sustainable. As these new obstacles are handled, please continually show support for your favorite roasters.
On a more personal note, I’m excited for the upcoming Bahrain F1 race weekend (especially after the painfully uneventful Japanese grand prix) and the other day I found out Rick Rubin started writing on Substack. Now, it’s time for our Weekly Roasts!
Today we’ll be exploring a wash-processed Ethiopian coffee from Process Coffee in Belfast, Northern Ireland, and a winey Ecuadorian coffee with an extended fermentation process by Color Coffee in Colorado, United States. Let’s dive in! 👀
The daily sipper
The Ethiopia - Guji from Process is today’s clean and approachable selection with beautiful underlying intricacies. From the iconic growing region of Guji, this lot was produced by multiple local farmers in Denbi Uddo neighborhood.
While most wash-processed coffees commonly produce a more clean profile in the cup, this one’s a bit more complex. This Ethiopian coffee has a rich body and buttery mouthfeel with notes of red fruits, cherry Bakewell tart, honey, and caramel. For brewing, I’d suggest using a Hario V60, an Origami, or an AeroPress.

The wild one
Our bright and expressive selection is the Chamba from Color with a unique label featuring photography by Jack Garland. Gabriel Chamba is the producer of this coffee and he’s a second generation grower in the Paltas region of southern Ecuador.
The 48 hour dry fermentation processing applied to this coffee surfaces unique characteristics in its flavor profile. You can expect vibrant notes of acai, cherry wine, raspberry jam, and cranberry with a clean finish. I’d recommend using the Hario Switch, Hario V60, or AeroPress methods to brew this distinctive, winey roast.
