Dear coffee lovers,

I hope you’re all enjoying the spring weather! Last week, Coffee Club subscribers Taurean Bryant and Pedro Peguero Jr. launched the 3&3 newsletter. In each issue, they explore 3 design industry findings and 3 non-design industry findings—I’d highly recommend checking out this refreshing project.

For our featured roasts, I tracked down a crisp Honduran coffee from Rooftop Coffee Roasters in British Columbia, Canada and a uniquely processed Rwandan coffee from Scenery Coffee in London, United Kingdom. Let’s dive in! 👀

The daily sipper

This week’s balanced roast is the Honduras, Danilo Sanchez from Rooftop’s Cherry Bomb Series of coffees. This lot produced by Sanchez was in collaboration with Semilla Coffee, who support and empower smallholder coffee producers.

Using washed and anaerobic processing methods, this coffee showcases floral and bright flavor notes of juniper, mango, lime sherbert, and Asian pear. Preparing this Honduran roast on the Hario V60, Origami, and Chemex filtered brewing methods would yield a delightful cup of joe.

The wild one

The Rwanda - Shyira Anoxic Natural from Scenery is our pick for a coffee that leans more toward the wild side. This exceptional coffee was harvested by 765 private smallholder farmers in Shyira, Rwanda then processed by the Muraho Trading Company using a creative "water-pillow" anoxic style method (definitely give this a read 👀). This method ultimately creates a low-cost extended fermentation environment, which produces a coffee that tastes more complex.

Reminiscent of a vibrant Ethiopian coffee, you can expect to taste tropical notes of pineapple, blueberry, pink frutella, and watermelon. I believe this Rwandan coffee would be phenomenal when brewed on a Hario V60 (definitely try it iced 🧊), AeroPress, French press, or as espresso shots.
