Weekly Roasts: Rose and Paix
Discover an approachable Guatemalan coffee with a sweet profile from Rose Coffee Roasters, and a dynamic Colombian coffee from Paix Coffee that's bursting with flavor.
Dear coffee lovers,
Last week brought big news for home espresso fans: Fellow announced the Espresso Series 1, now available for pre-reservation at a special launch price of $1,200. With its sleek design and thoughtful engineering, Fellow promises cafe-quality espresso and milk drinks, right from your kitchen.
Also worth sharing: Coffee Club subscriber Pedro Peguero Jr. introduced me to Coffee Receipt Stories by Odding, a beautifully crafted web project (be sure to view it on a desktop browser).
Ready to dive into this week’s new roasts?
We’re featuring a clean, balanced Guatemalan from Rose Coffee Roasters in Zurich, Switzerland and a vibrant Colombian from Paix Coffee in Virginia, USA (don’t miss our recent Cafe Trip with them). Let’s take a closer look! 👀
The daily sipper
Today’s approachable roast is the La Senda from Guatemala by Rose. The team at Rose shares the story on how they started working with Finca La Senda:
We were first introduced to [Finca La Senda] through Yancy, the daughter of Maria, who runs the farm back in Guatemala. By coincidence, Yancy also lives in Zurich and is well loved by the coffee scene here, especially for sharing her family's coffee through the scene.
Although this coffee was fermented for several days, the roaster notes that it will still yield a very clean cup. With its natural processing, you can expect richer notes of grape, strawberry, and sweetness. This would be a delicious filtered brew and I’d recommend using a Hario V60, Origami Dripper, Cafec Flower Dripper, or Chemex.

The wild one
The Orange Delight coffee by Paix is our vibrant pick this week. The Paix crew teamed up with Know Where Coffee to source this innovative lot from the Hernandez family in Los Nogales, Colombia.
The thermal shock processing of this coffee will bring out dynamic flavor notes of orange Tootsie Pop (specifically as you reach the chocolatey center) with a creamy, orange dreamsicle body as it cools. For this expressive roast, I’d suggest brewing it on a Hario V60, Origami Dripper, an AeroPress, or as espresso shots. I’ve got a feeling that the Orange Delight would also be great for milk-based espresso drinks. 🍊
