Notes: Yellow Plum, Apricot, Almond
Process: Yellow Honey
Note from the roaster:
Alejo Castro is the fifth-generation descendant of renowned coffee pioneers Alejo C. Jimenez and Wilhelm Kahle. Alejo’s ancestors planted some of the first specialty coffee plantations in the early 1900s with the aim to produce the best coffee in the world. With over 200 years of family tradition in trading specialty coffee, Alejo’s mission for the farm has been exclusively focused on improving coffee quality while making a positive impact on the environment.

Process: 164 Hour Anaerobic Natural
Note from the roaster:
At Flying Pumas, conservation is at the core. Of the total estate, 60 hectares are devoted to coffee and 120 hectares are preserved for natural regeneration and wildlife corridors. This decision is part of a broader commitment to agroecology and biodiversity, supported by practices such as shade reforestation, natural pollination, and protection of local species including jaguars, ocelots, and the pumas that give the farm its name.
