Dear coffee lovers,

For today’s roasts, we’ll be exploring a balanced Ecuadorian coffee by Skittle Lane from Sydney, Australia and a cinnamon anaerobic-processed Costa Rican coffee by Black & White Coffee Roasters from North Carolina, USA.

The daily sipper

Our clean and balanced selection for this week is Skittle Lane’s new wash-processed Ecuador Alambi coffee. A cooperative of producers in the Alambi region of Ecuador cultivated this coffee, continuing a legacy passed down to them through generations of their families.

The washed processing of this coffee gives its flavors more clarity, resulting in elegant tasting notes of blackcurrant, honey, hazelnut, and cola. For brewing methods, the Skittle Lane team believes this coffee is optimal for espresso, French press, or stove top.

The wild one

Black & White’s cinnamon anaerobic Esteban Zamora coffee from Costa Rica is today’s funky selection. This coffee’s unique processing will demand your attention! 👀 For an in-depth look, here’s a processing note from the Black & White team:

Everything but the cascara (coffee cherry skin) is added to GrainPro bags and combined with 1 kg of cinnamon powder for every 46 kg of coffee cherries. This mixture is left to ferment in an anaerobic environment for six days before finally being moved to concrete patios to begin drying.

As a yearly offering from Black & White, they’ve highlighted that they’re most excited about the refinement of this lot. When taking a sip, you can expect sweet notes of cinnamon toast crunch, baked apples, and blackberry compote. I’d suggest brewing this coffee with an AeroPress, a Hario Switch, or a Cafec Deep 27.
