Dear coffee lovers,

Coffee Club subscriber Taurean Bryant recently shared a refreshingly unconventional pour-over recipe that’s well worth trying. By introducing turbulence into the brew, this simple method draws out sweeter, brighter notes in your cup. Give it a try—and let us know what you think in the Coffee Club chat!

In other news this week, A24 and AppleTV dropped a teaser for Spike Lee’s latest joint, Highest 2 Lowest, starring Denzel Washington. It’s a bold reimagining of Akira Kurosawa’s iconic High and Low—a classic worth revisiting (or discovering) before diving into Lee’s new vision.

For this week’s roasts, we’re featuring a balanced Honduran coffee from Slow Bloom Coffee Co-Op in California, USA and an expressive Ethiopian coffee from Kolibri Coffee Roasters in Tynaarlo, Netherlands. Let’s dive in! 👀

The daily sipper

Our featured coffee for this week’s clean and balanced pick is the Efrain Marquez from Slow Bloom. This lot from Comayagua, Honduras is rooted in passion and heritage:

Efrain himself began working with coffee at an early age, helping his father and learning from him since he was ten years old. In 2011, his father passed down a plot of land to him, and with much effort, Efrain managed to plant the area, which now spans three hectares.

Expect tropical, juicy tasting notes of key lime and mandarin followed by toasted coconut and toffee. For this roast, I’d suggest brewing with a Hario V60, Kalita Wave, or AeroPress to highlight its acidity, sweetness, and smoothness.

The wild one

We’ve selected the Ethiopia Worka from Kolibri as this week’s expressive and wild offering. Known for producing exceptional specialty beans, Alemayehu Daniel cultivates coffee on his 10-hectare farm in the Gedeo region of Ethiopia.

With this naturally processed coffee, you’ll experience vibrant notes of melon candy, stone fruit, and rosehip in the cup. Brewing the Worka as espresso shots will deliver a delicious sweet, fruit-forward result. For filter methods, I’d suggest preparing it on a Hario V60 (try it as a Japanese iced pour-over 👀), Hario Switch, or AeroPress.
