Dear coffee lovers,

Last week, for the first time, I pulled delicious espresso shots in the comfort of my own home on my new Rocket Appartamento. There’s something to be said for researching, deliberating, and waiting for the perfect purchase. This arrival was a very welcome addition to my coffee bar setup. On top of this, I fit in a couple of new cafe visits, and the mind-bending Severance S2 finale aired. Needless to say, it was a pretty great week. I hope yours was too. Ready for Weekly Roasts?

Today we’re exploring a special Honduran roast with a delicate profile from Tim Wendelboe in Oslo, Norway, and a rare Colombian Ombligon varietal from Sweven Coffee in Bristol, United Kingdom. Let’s dive in! 👀

The daily sipper

This week’s balanced selection is the Finca El Vikingo, an iconic Geisha varietal, from Honduras roasted by Tim Wendelboe. Producer Jobneel Caceres Dios has grown Geisha coffee for three years now, and according to roaster Tim Wendelboe, this harvest is the best one yet.

“Finca El Vikingo” from Tim Wendelboe

Being a Geisha varietal, one might assume this brew is more expressive, but it’s quite mellow. This coffee underwent a washed process, yielding delicate herbal, floral, and citrus tasting notes in the cup. To experience the subtle profile of the Finca El Vikingo, I’d suggest brewing it with a Hario V60, Cafec Flower Dripper, or Chemex.

The wild one

The El Diviso by Sweven, an Ombligon varietal (a natural mutation of the Ethiopian Landrace varietal), is our limited and vibrant coffee selection. This unique lot was produced at the El Diviso farm in Huila, Colombia owned by Nestor Lasso and his brother Adrian Lasso.

“El Diviso“ from Sweven

Nestor Lasso’s complex “advanced natural” processing of this extremely rare Ombligon varietal is forward-thinking. In the cup, this coffee is bursting with notes of strawberry, macaron, and cherry bakewell with a bright acidity. I recommend brewing this gem of a coffee on a Hario V60 (this would be a phenomenal iced pour-over 👀), Kalita Wave, an Origami, or an AeroPress.
